Our Story
Solitude Brewing Company began far from Conesus Lake—on a backcountry camping trip deep in the untamed wilderness of Utah.
Surrounded by towering landscapes, still water, and the kind of quiet you can’t find at home, founder Cal Hasler found himself reflecting on how powerful it feels to slow down and truly be present. Sitting beside a secluded mountain lake under a sky full of stars, a simple idea started to form:
What if the feeling of the outdoors could be shared—right here at home?
What if craft beer, great food, and a welcoming space could bring people together in the same way nature does?
That moment sparked the vision for Solitude Brewing Company.
Solitude was built to blend the spirit of adventure with the comfort of familiarity—a place where guests can unwind, connect, and enjoy thoughtfully crafted beer in a space inspired by the natural world. From rustic details and warm wood tones to beers designed for every season, everything we do is rooted in approachability and intention.
When you step through our doors, we want it to feel like stepping off the trail and into a place where you belong. A place to gather after a day outside, meet up with friends, bring the family, or simply take a moment for yourself.

At Solitude Brewing, we're proud to feature an American-made brew system crafted by Global Stainless Systems in Oregon. Our 10BBL, 2-vessel natural gas steam-powered brewhouse exemplifies quality craftsmanship and innovation, essential for our brewing endeavors.
Utilizing steam technology, this system ensures energy efficiency and maintains consistent brewing temperatures, allowing us to explore a diverse range of brewing styles and techniques. Designed with our taproom brewing needs in mind, this brew pub style system is integral to producing the exceptional beers that define Solitude Brewing Company.

Phil is passionate about one thing above all else: making sure every beer you drink is exactly how it’s meant to be.
Whether he’s brewing behind the scenes or pouring a pint at the bar, Phil focuses on creating clean, consistent beers that give people the best possible experience—every time. He’s always exploring new styles and flavors while staying true to balance, drinkability, and quality.
What makes Solitude special to Phil is that it’s home. Many of the people enjoying his beer are neighbors, families he knows from school, and familiar faces from around town. And just as exciting? Watching visitors from outside the area discover what’s been built here and fall in love with the scene.
When he’s not brewing, you’ll find Phil hiking, catching live music, playing board games, gardening, or getting competitive with paintball.
And if Bigfoot ever walked up to the bar?
Phil’s pouring him a THC seltzer—because even legends need to chill sometimes.

Favorite Beer: Amar-Yeti Sour
Katie brings warmth, organization, and leadership to the taproom team. She joined Solitude after several years in customer service, including at Hartman’s Distilling Co. in Buffalo, NY. By day, she works as a radiation therapist at Noyes Hospital, helping deliver cancer treatments and she’s now pursuing a Bachelor’s in Nursing. For her, Solitude is a breath of fresh air and a creative outlet away from the intensity of the medical field.
She’s passionate about connecting with guests, leading by example, and keeping things running smoothly behind the bar. When she’s not at the brewery, you’ll find her spoiling her two dogs, Luna and Wilbert, cheering for the Bills, or catching a concert.
